Saccharomyces bayanus var. uvarum cream yeast, in cream, an Atecnos selection of yeast from iris (Iris Pallida) grapes and flowers from Marca Trevigiana.
Excellent for its high capacity to give intense berry fragrance, along with significant acetate and ester production.
This results in wines of high complexity, which stand out on a sensory level for their aromatic notes.
Does not produce H2S.
