The technicians at Laboratorio Polo have perfected an exclusive winemaking technique designed to achieve wines that are stable against tartaric precipitations. A safe system, backed by over 20 years of experience, capable of preparing wines during fermentation and subsequent tartaric maturation without the use of traditional refrigeration at -4°C.

Thanks to extensive research, the result of experimentation and innovative production techniques, a series of products (Retinex, Retinex5, Retinex gel) has been developed, ensuring tartaric stability for well over 20 years.

A specific analysis (STAB2) allows precise determination of the tartaric stability of both potassium (K) and calcium (Ca). In the case of calcium instability, we can inhibit the formation of deposits without lowering the calcium levels in the wine.
