Maurizio Polo statements for “Il Sole 24 ore”

Over the past five years, 15 million euros have been invested, including logistics (8,000 square meters of laboratories, offices, warehouses and sterile areas where yeast is produced) and technology (all state-of-the-art instrumentation).
Innovation, research (interesting collaborations with several Italian universities are in place) and strategic vision make up the mosaic of a new business culture where ATECNOS, our brand, was born. It is a case of saying “nomen omen” because these are natural yeasts, produced through the development of a plant that does not involve pasteurization or heat treatment. They are available in cream or liquid state.
Sterilization is done cold through a series of microfiltrations. In this way, our yeasts are more viable, therefore better performing and more vital (6 to 10 times more than traditional yeasts). We export them to Portugal, Spain, Germany, Israel and also to the French, the first yeast producers in Europe, who appreciate their properties and quality.
Starting with wine, over time we have expanded our reach to cider, agribusiness and the brewing industry. Just the latter is giving us great satisfaction, just think that, according to a recent ranking compiled by the specialized magazine “Fermento birra,” 4 of the 5 best beers in Italy are made with our yeasts.
Next goal: to produce yeasts with fungicide activity to combat downy mildew, powdery mildew and botrytis.
A healthy company that continues to grow: it closed its last financial statements with a turnover of 7 million euros.2 million euros were recently invested in a new shed and new instrumentation.
The workforce is also steadily increasing. For Maurizio Polo, what matters is to stay in step with the times, continuing on the path of innovation and maintaining what can be called “a realistic optimism.” It is an attitude, a way of feeling marked by positivity. A fundamental tool these days, always identifying new opportunities.
