Bioenologia 2.0 at Enoforum 2017

On May 17, 2017, Bioenologia 2.0 participated in Enoforum in Vicenza, the most important technical-scientific congress in the wine sector. For the Opitergina company, it was an opportunity to present the results of recent research conducted in the laboratory and in the vineyard.
Module 1 – When Yeast Tells the Story of Wine
"Walking through the vineyards in search of new yeasts." Dr. Angiolella Lombardi, microbiologist at Bioenologia 2.0, will focus on microbial biodiversity as a source of yeasts with new and unique enological potential.
"Vineyard yeasts: why choose them and how to return them to the winery," by Professor Angela Capece, Starfinn, Spin-off of the University of Basilicata. The introduction to the module will be given by Professor Patrizia Romano, professor of Agricultural Microbiology at the University of Basilicata and Representative of the Technical Scientific Committee of the International Organization of Vine and Wine.
Module 2 – "Tamed" Non-Conventional Yeasts for Enology
"Biodiversity and enological characterization of non-Saccharomyces yeasts from various Italian terroirs." Presentation by Professor Sandra Torriani of the Department of Biotechnology at the University of Verona.
"Industrial potential of non-conventional yeasts: some examples," by Maurizio Polo, Laboratorio Polo. In recent years, Bioenologia 2.0 has invested time and resources in sampling and isolating company-specific autochthonous yeasts and studying their technological and enological characteristics. This scientific project has taken our research teams across Italy; in addition to Veneto, Piedmont, Emilia Romagna, and Trentino Alto Adige, we have explored Tuscany, Marche, Abruzzo, Lazio, Puglia, and Sicily. The autochthonous yeasts isolated in 2015 produced, with the first fermentations of the following year, excellent fermentation kinetics and wines of high sensory complexity.
